3322-11 Chef
Planning and organising the preparation and cooking of food in dining or catering establishments.
3322-11 Chef Skill Level:
An AQF Diploma or higher qualification or at least 3 years relevant experience. Sometimes relevant experience is required in addition to the formal qualification.
3322-11 Chef Tasks Include:
- planning menus and estimating food and labour costs in consultation with the Head Chef
- implementing staff rosters and supervising the activities of cooks and assistants
- discussing food preparation issues with managers, dietitians and other staff members
- requesting food, kitchen supplies and equipment
- demonstrating techniques to cooks and advising them on cooking procedures
- preparing and cooks food
- portioning food, adding gravies, sauces and garnishes
- explaining and enforcing hygiene regulations
- may be selecting and training staff
- may be freezing and preserving foods
